Summer chickpea salad with grilled shrimp. Yummy!

Chickpeas are a great healthy snack that’s full of fiber. Here is the recipe I use to make them at home:

  • Soak dry chickpeas overnight in water. Drain and rinse.
  • Bring them to a boil then simmer for 10 minutes adding some cayenne pepper.
  • Place them in a bowl and pour 1/2 squeezed lemon over them and mix.
  • Preheat oven to 350.
  • Lay the chickpeas on an oiled baking sheet. ( I usually use the organic olive oil spray) Make sure they are all laying flat.
  • Cook for 15 minutes then mix them around brushing some of the remaining lemon juice left over in the bowl.
  • Check again after 10-15 minutes and do the same. Total cooking time is about 45 minutes depending on how you like them.
  • I usually take them out when they are starting to brown. I find when cooking them too long they get very crunchy.
